Application
[6]-Shogaol: A Bioactive Component of Heated or Dried Ginger
[6]-Shogaol is a pungent compound that is rarely found in fresh ginger (Zingiber officinalis), but is found in heated or dried ginger. Its precursor before dehydration is [6]-gingerol [G0413], but it has been reported that [6]-shogaol is mainly responsible for the pungent flavor and biological activity of ginger. It has been reported that [6]-shogaol shows various physiological activities such as anticancer, antioxidant, antibacterial, anti-inflammatory, and anti-allergic effects.
